- Arugula. I thought you had

- Not when it's paired correctly.

This is amazing.

- Yeah. The right wine can
really enhance the flavors

in the dish.

Now, try the tomatoes.

These are San Marzano tomatoes.

They come from a region of Italy--

As I was saying, these are
called San Marzano tomatoes.

They come from a region
of Italy called Salerno,

and in Salerno they just happen
to fish a lot of branzino.

Now the capers we use are
also pickled in Salerno.

So this dish is sort of like
a love letter to the region.

There's an old saying that goes,

"What grows together, goes together."

- So what you're saying
is food has the ability

to transport you to places
you've never been before.

- Yeah. Well, I mean, my
family's actually from Salerno,

so I've been once or twice, but yeah.

- Okay. So this is kind of
like a taste of your home.
