So, the dough comes out of here
on a sheet, and we cut up

by hand. Four layers of dough,

The secret

is in the layering.
Skip a step

and it won't be flaky enough.
Too many

and the dough becomes heavy
and you spoil the pattern.

all those by hand?

- Well, not me personally,
but yeah.

- Well, it just seems
like a lot of men hours

when there are machines
that could do the cutting

for you in a quarter
of the time.

- A tire factory
in Youngstown automated,

and there were
a lot of layoffs.

- Well, it's not that easy.

You learn to code, possibilities

are endless.

How did you come to climb

kid goes to college,

Well, uh, I got
one of those dads.

very good at what he does,

and I guess he wanted
to mold me in his image,

I see things in a different way.

through college. I studied
English literature,

right back where I started.
