from over 20 years in the military.

After my initial restaurant recon,

I am going to put these kitchens though

a brutal two day boot camp.

Their toxic relationships have made them blind

to the issues in their restaurant.

[Joe] When someone calls your baby ugly,

[Andre] We're kickin' the tires and lightin' fires

for Fairfax Station, Virginia.

Today's target: Chloez Caf�.

A 60 plus seat strip mall restaurant that opened in 2019.

Key operatives include Carolyn Herrera.

How are you guys?

[Andre] First-time restauranteur,

who's keepin' the business afloat

serving breakfast, brunch, and lunch.

Dinner is missing in action,

as they only have a few boring specials,

and their customers are not responding well to them.

[Carolyn] I do think that it's imperative that we expand

the dinner menu.

We haven't quite figured out how to do that, yet.

[Jade] Working with your mother,

it can be taxing on both of us emotionally.

[Andre] Jade Gold is Carolyn's daughter,

and second in command.

Or at least, she's supposed to be.

[Carolyn] My relationship with Jade can be rocky at times.

What are you doing?

[Jade] The watermelon's frozen.

We have drinks and smoothies and things.

[Andre] Caroline's husband Joe is about to change careers

to full-time at the caf�.

This former military man is a restaurant rookie

who is happy to let his wife command.

The boss is my wife, Carolyn.

She's in charge.

She lets me know it, too.

[Andre] One thing that I don't know,

what kind of caf� is this?

The mismatched d�cor has me totally confused.

And despite no dinner menu,

I'm saving room for an extra helping of family chas

and a communication breakdown.

things get messed up in the kitchen.

[Jade] My mom is taking Rush's order,

[Jade] My mother and I, we get so frustrated.

Because we want everything to run so smoothly and so perfect,

that we start tearing each other down.

And I wish it wasn't like that.

What's your vibe you're goin' for?

[Joe] I get a lot of people comin' in here sayin',

"Yeah, I feel like I'm at the beach when I'm here."

-[Andre] The beach? -Just kinda relaxing...

[Andre] I'm assuming you're gonna say because of the blue.

Maybe gives me a beach feeling.

But as far as anything else,

it's, it's missing the mark for me.

I, I got a question for you.

I know you got another job,

but you've been coming here all the time.

Just kinda learning things on weekends,

covering, picking up gaps, and things like that.

And I just decided to walk away

and give my heart and soul to this place.

so while I'm waiting,

I'm curious to hear what the other customers

have to say about this place.

Tell me about the food.

I ordered the pastrami burger,

but they delivered instead the blue cheese.

-I ordered zucchini sticks. -You wanted zucchini sticks.

-Except she was like... -"Mine tastes like cheese!"

A zucchini with cheese.

Well, not all of them. Just...

You know, it's like when someone calls your baby ugly,

you kinda take it personally.

But it's our baby,

and I get what he's sayin', also.

Because once I started pickin' it apart,

then I can kinda go,

"Yeah, this doesn't have any salt."

It makes sense.

[Andre] How long you been here, Chef?

[Carlos] About two years over here.

Carlos seems to know his way around the kitchen.

But I wonder why his food is so bland and uninspiring.

And so this is the only station that you have here?

[Carlos] Correct.

[Andre] It's nice, it's clean...

But I see a lot of things right now

that we need to make a lot better.

Well, I haven't heard much from you, Joe.

Why?

She's the boss, I'm listening. She understands.

What, what's your job? What do you do?

Whatever she tells me to do.

[Carolyn] Like my Betty Crocker oven?

[Joe] It's the only oven we have.

In this big-ass place,

doin' all that huge-ass meal, this is the only oven you have?

[Carolyn] Yes.

[Andre] The kitchen is compact, but clean.

But the walk-in is pure chaos.

I think I'm too big for this.

No, I don't wanna go missing

for the rest of my life inside here.

[Carolyn] That's a good question.

No wonder they struggle with quality and consistency.

I'm shocked that they can find anything in here.

Holy hell, I'm exhausted just goin' through this place.

The food is coming out extremely bland,

and...

It's making me bored.

Before I shut this place down,

there's one more operative I need to get feedback on.

And that's Carolyn's daughter, Jade.

So let me talk to you, I'm curious.

What do you think about the restaurant?

You know, this place means a lot to me,

just because it's not just my family's restaurant.

It's a place of gathering where everyone can feel like somebody,

and not just a number.

Okay, what is your role for the restaurant?

I'm the one that runs the show when they're not here.

I'm the Jade of all trades.

So I can barista, I can cook, I can serve, I can make drinks,

I make things up,

I try to make things taste good, and it works.

But when they're back, you're...

Frustrated.

[Andre] Carolyn and Jade seems to be avoiding each other.

And you can cut the tension with a knife.

With Chef coming in, I hope that we'll be able to actually

amp up our menu.

And I'm really excited for it. I really am.

Because the place and my family definitely need

a stronger structure.

[Andre] Between the confusing interior design,

tasteless food, Joe's lack of knowledge,

and the mother-daughter drama,

I've got my work cut out for m.

Time to get the customers to leave the caf�,

so I can start boot camp.

really disappointed.

Those changes start with capturing the beach vibe

they were going for.

I'll infuse it into the d�cor and the menu.

The food I tasted was bland and forgettable,

so we'll fix that.

Next, leadership.

Carolyn needs to keep her emotions in check

and lead with authority,

and Joe needs to be more engagd and proactive.

While I'm addressing those issues,

I'll get to the bottom of the tension with

Carolyn and Jade.

This is a beautiful place.

It has endless potential,

but there's a couple things missing.

I'mma be honest with you, all right?

I don't know where the leadership is coming from.

I don't taste any flavors that I should in the food.

And no Hawaiian in Hawaii here.

I want you to meet my designer.

[Andre] She's going to give you an actual beach vibe.

You have a good concept, and I love the color.

It goes well with the beach theme,

but it's not all the way there.

We wanna really, really hone in on

how much you guys love the beach,

and you know, make it feel like a beach restaurant.

It's smaller changes,

but they're actually gonna be huge

in the grand scheme of your concept

and overall look.

I live by rules of mine that I've carried with me

a long time.

That I adapted not only from the military,

but from my life bringings.

And I call it the Four P's.

My first P is practice.

The next one is somethin' that you need to understand,

which is pride.

My most important one, peace of mind.

You've gotta take care of yourself

before you can take care of the world.

And my personal favorite, push-ups.

The kitchen's pretty clean.

the customers if I'm away.

sort of the house positions.

I understand the manager does everything...

But they still do managerial stuff.

I guess we need to define the definition of manager.

What do you guys think of Jade's performance?

She's got great ideas, she's...

She wants to do all these things at once.

She can handle it.

It's a personal reaction versus a business reaction.

We can't fire everybody.

is they are kind of goin' at it,

and I'll just kinda watch and watch.

I won't intervene,

I'll kinda let them do what they need to do.

it could be somethin' that's crucial to the business.

Your daughter, who is your manager,

is addressing it.

And the person is disrespecting her.

So what happens is he doesn't give a shit

what she says and how she feels,

because you are in charge.

But with only 30 hours until the relaunch,

the team needs to start leading with a strong, unified voice.

on the new menu items.

This menu all starts with real fresh ingredients.

Since Chloez was usin' so much pre-made junk in their food,

I ordered some fresh produce to improve their menu.

Fresh avocados. Real avocados.

Not like that [bleep] they had the other day.

I don't know what the hell that was.

Fresh pineapples.

Look at that.

Now the fun begins.

I have three goals for the back of the house.

First, since Chloez wants to be a beach themed restaurant,

let's put some seafood as some options.

Second, let's find some flavorful options

for that terrible-ass chicken sandwich I had.

And third, to help Carlos and Martha

work officially as a team,

I wanna make sure they can put out quality and consistency

on every plate.

We're gonna bring it up, make it simple and easy.

Do some fresh ingredients, and keep it goin' from there.

Before we get started,

there's a couple things I wanna show you guys.

We got some brand new pots and pans,

which is gonna make life a lot easier,

because they are calibrated and they cook evenly, perfectly.

And also, since we turned this into, like, a beachy theme...

One of my favorites,

that I never knew it would be one of my favorites,

is octopus.

-Oh, yeah. -[Carlos] Yeah.

[Andre] We gon' let that go for about 30 minutes or so.

Next thing I'm gonna do is gonna cut up

everything else for the meal.

This appetizer will be prepared with blanched potatoes,

and pattypan squash.

Preparation is literally about 90% of the battle.

Everything in it's place? It's simple.

So the moral for service, always work together.

Chloez has never had charred octopus

on the menu before.

But if they wanna take their customers to the beach,

this is how you do it.

Just a nice char.

Some caper, give me some of those lemons.

It looks appealing to you, right?

You're like, "I've never had octopus before,

but I think I wanna try it."

A summer shrimp salad in a tortilla bowl.

This is a nice little fun one because they get to eat

the entire bowl with it.

Nice lil bowl, presentation good.

We're ready for service.

I like that nice char on my shrimp.

I'mma cut up everything for the vegetables, all right?

One more down, one more to go.

We're gonna do the cordon bleu.

[Carlos] Add our cheese?

This was the hardest part. That's nice.

All it needs is a nice rolling in flour,

eggs, and panko breadcrumbs,

then it's deep fried until golden brown.

If you recall yesterday,

I ate a lot of different things.

Elevate it and make sure it's done right.

We're talkin' about saut�ed asparagus,

and garlic mashed potatoes.

It's all about workin' with what you got,

and then improvise.

I'm a big seafood person, so I loved it.

[Andre] What's in it is it's a grilled taco shrimp salad.

It's beautiful.

[Andre] Right, and mind you, the bowl is edible.

It's vibrant, it's light, it's fun...

You know, look at it, you get the whole point.

[Jade] It might be, like, light,

and it doesn't look like there's a lot of shrimp,

but the flavor is really what puts it all together,

so it really makes an image.

That's the point.

You wanna have that flavor all the way through.

This was a play off

the bada-bing that went bada-boom.

Here we go.

You got a chicken at the beach.

[Carolyn] It's wonderful.

It's juicy.

It's crispy,

and that cheese and then that moisture from the chicken.

And those flavor profiles,

they kinda explode in your mouth.

-So you get all three. -[Joe] I love it.

[Carolyn] I love the chicken cordon bleu,

the asparagus, the mashed potatoes.

Everything was delicious.

[Andre] Today was crazy. Right?

It was highs and lows, and ups and downs.

But a lot of resolution that was made.

Especially from the family.

You guys did an amazing job, also.

I have to give it to you. Right?

You overcame some hurtles and some lot of different things.

But Joe and Carolyn are findin' out the hard way...

There's more to it than just love.

To run a business you gotta have a voice,

Chloez Caf� has been through hell in the last couple days.

When I first walked in here, I was extremely confused.

Was it a beach theme? Was it a family theme?

The place lacked atmosphere and direction,

even though they wanted to create a beach vibe.

When we finally got done,

it is that beach vibe that we have,

and it is that family restaurant that I wanna come to.

I already love the color of the place.

We got rid of a lot of the clutter,

and we went minimalistic but 100% effective

all the way across.

They put in a kids' station for painting, drawing,

and just that whole family vibe.

When we talked about family,

so when people see this nice cute edition.

But one of my favorites, also, is the family wall.

You're gonna notice it's just this little area.

You know what this is? Growth.

-[Joe] Growth. -[Andre] Right?

This is family.

-[Joe] That's awesome. -Now it's finished.

That's awesome.

I'm so grateful to Chef Rush helpin' us come up with

new menu items, and decorating, and...

It's truly been a learning experience.

[Andre] Service starts in less than six hours.

So, we have a long day ahead.

We have drinks to do.

Chloez needs to elevate cocktails

with fresh ingredients and major beach vibes,

like my Maui Mojito.

So we have pineapple,

we also have these nice fresh guava.

Which a lot of people don't even know what they look like.

We'll add a little lime juice and soda water,

and blend until smooth.

It's already starting to smell good.

Perfect.

That looks good.

It just makes your palette just, like, come alive.

-Right? -[Jade] Yeah.

[Andre] This is one of the four P's.

Which one would this be?

So, you can't go wrong with mint

unless you put too much mint inside of it.

It doesn't take a lot.

It's really well balanced,

especially even with having coconut rum.

Yeah, the coconut rum is very settled.

I mean, look at that.

I'm not afraid of the challenge

for making my drink for multiple people at once,

because tonight is where I'm definitely gonna practice

to make it perfect.

Does it feel like the beach?

Oh, yes.

[Andre] We still need one more entr�e

for tonight's service,

and it has to be somethin' these guys can do

in a tiny oven.

When done right,

a pork tenderloin is a thing of beauty.

I wanna show you how we're gonna do this, right?

It's gonna be quick and fast and hard.

Pepper, Italian seasoning, garlic, red pepper.

Now, I normally have this in a pan

and do it all at one time.

Okay?

Under, under. There you go!

I want to get you guys in a habit of multitasking.

You see that nice brilliant color on it?

Right, now we'll put this in long ways, just like that.

The tenderloin cooks at 375 for 20 minutes.

You have to watch it.

There's no saving an overcooked pork.

The pork will join forces

with an army of fresh flavors and textures

from saut�ed mushrooms, the fried cabbage,

and the sweet charred peaches.

When it gets a nice caramelization, yep.

Turn it down. There you go.

Nice color, nice color, nice color.

The caramelization of natural sugars

will give it a blast of sweetness

to this savory dish.

You wanna make people eat stuff that they've never eaten before.

Like the, like the octopus that we had yesterday.

That goes for simple ingredients, as well.

Avocado.

I love those fresh avocados. Right?

I want it to be different.

My fresh avocado mash will compliment this dish,

and show Team Chloez how this ingredient

is supposed to taste.

Gimme some of that lemon and lime.

Give it to me.

Presentation is key,

and I'm not just talkin' about plates.

And there's one down.

This is our final entr�e to today's service.

And you know where it was cooked?

In that tiny-ass little oven back there.

So, each thing has a different flavor profile.

From the cilantro, rice, from the avocados,

which I love with that fattiness from it.

Right, of course the pork is a flavor by itself.

And I did the cabbage, it's a fried cabbage.

So you have that color that's goin' on,

and you're thinkin' about the restaurant,

and you thinkin' about that beach theme.

And then you got those nice fresh peaches.

And of course, with that pork, it just marries in.

That's good.

The avocado's really nice.

Like, I think that's actually my favorite part,

besides the meat.

The freshness just pops.

[Andre] It's the freshness that comes through.

Now, that's what avocado tastes like.

All right, eat up.

We got a few more things to do,

and service is gonna begin in about two hours.

First, I need to make sure Carlos and Martha

haven't forgotten what I showed them yesterday.

My first P is all about practice makes perfect.

I want them to make the charred octopus, shrimp salad,

and the cordon bleu before the doors open

in two short hours.

It looks good. I like the color profiles.

You guys paid great attention to it.

Yeah.

That's what the [bleep] I'm talkin' about.

Now we gotta do this 30 more times.

I'm excited about that.

That was a great first bite.

and then I need you to cut them into really small pieces

so I can blend them and puree them, okay?

The last two days,

we went through so many ups and so many downs.

There was a reason why I did that.

Because I needed them to succeed.
