Making such diseases as salmonella
and botulism a serious threat

if not properly
handled and cooked.

There are many risk
factors when it comes to gator meat.

will eat anything.

at what he eats and I'm like, eh-eh.

I can't do that. I don't want
to risk getting sick out here.

the smartest thing you could possibly do

And with winter,
especially with the food sources out here,

majority of them
are cold blooded.

And once that cold
weather really hits,

all those alligators
are gonna go dormant.

So, it's essential that we jump
on this as soon as possible.

Get an alligator on the line,
and get as big of a meat bank as we can,

coming into these colder months.

He's close to shore right now.

My heart is already beating.

Just the thought
of taking him down.

That's a large gator.

This is the closest I've
seen him to shore yet.

I'm wondering if he's already
smelling the fish head on the hook.

We've got two
gators right here in the river.

We have our bait hook out here

on the big willow tree where
we caught the first alligator.

There is nothing on this hook,

and the fish head is still
hanging above the water.

Recently, the water has
completely receded from our area,

taking all the bowfin fish,

all the alligators,
and all the wildlife.

Our strategy for finding
another food source

is to spread out.

So, matt,
he is out there hunting,

so hopefully he comes
back with something.

I haven't seen
an alligator swimming

for three or four days now.

Our best bet is to
expand our horizons a bit,

try to find food
wherever we can.

I've always said on
my past challenges

that every river
has a heartbeat.

And there's a heartbeat to this bayou,
I know it is.

I am trying to follow
something that beats to

a whole different drum than
any place I've ever been.

And because of that

these game animals

are very hard to pinpoint.

You can definitely tell

there's a little bit of a
trail right through here.

It doesn't look like...

Like any constant traffic,

just looks like
one walk through.

I'm looking, you know, real hard
for tracks and signs of things moving.

I've seen some deer tracks.

I haven't seen any hog tracks,

really no raccoon
tracks or nutria slides.

One more time,
I'm gonna have to just cross the water.

The problem is,

this is not the
first time in my life

I've actually feared the water.

You know, I've swam with sharks.

It's coming right at us.

I have literally been
in the amazon waters

where who knows what's in there.

This is some caiman
looking territory here.

But right now, I fear the water,
because it seems like

every single time I go in
there and try to cross it,

I seem to come
out with nutria itch.

It's a risk. But,
every day we go without food,

sets us back a little bit.

All those animal tracks are
on the other side of the water.

- But every time I get into this water,

every time, pretty much,

I come out with something bad.

Wind's blowing pretty,
pretty steady.

We got the fire going,

but the wind is so strong,

and it's blowing in all the cold

and blowing out all the heat.

This is not a very good omen

is about 12 inches.

The problem is,
is when you set it for 12 inches

but then the tide
drops three feet.

Now you're four
feet above the water.

And, unless you find, like,
a 12-foot alligator out here,

you'll really not get anything,

so,
it really makes it difficult,

almost impossible to gauge 'cause
the tide has changed so drastically,

differently every single day.

Gotta lower that bait
in the water a little bit,

get it nice and
wet and saturated,

get those juices flowing.

we're some of the biggest
predators in the world,

but it's often the

that take us out
and hold us back.

Hunting in these environments
reminds me of when I was in the army

because you have to be looking all
around so you don't miss that opportunity.

A lot of animals blend into the
surroundings so well, especially the snakes.

I have concerns about being bit by
a venomous snake that I don't see.

However, sarah has some cold issues
and she's losing a lot of weight fast.

So,
to get some food really will help out.

I am going to braid a
tie string for my pelts

so that I can keep warm

and keep my hands free.

Getting a little bit of
work done because

I feel a little traumatized from these
last few days. They were so cold.

that we haven't eaten so
we can preserve it for later.

Smoking this meat out here

is absolutely necessary because

maggots will get in and
just start writhing, eat it up.

That's why we're paying a lot of
attention to it and just doing it right.

Smoke it and you get a
thin crust on the outside

and a protective layer.

Kind of like that.

The flies can't get in
there and lay their eggs.

And it's imperative to do so
if you wanna keep your meat.

You just can't escape 'em.

The only thing that's going on right now,

is me trying not to
die from the cold.

It really sucks.

What a cold night last night.

Another frigid one.

these cold nights,

we need to continue working on our shelter,

basically, a log cabin

around our shelter

to prevent any sort of wind,

and to help deflect whatever
weather storms come in here.

So I'm preparing ribs for breakfast,

Since we got this gator,
we're able to snack when we want to.

We've been really conserving the meat,
by smoking the whole carcass,

and just stripping pieces of meat out,
and then boiling it.

It softens up the meat,
it's preserved.

It's a smart way to take that...

extra couple of days.

To sustain us.

I knew from the beginning

growing inside of me in

and it's nothing...
Nothing to take lightly.

It's a true extra handicap
to the challenge for sure,

'cause, you know,
it's tough enough, but now it's...

Now part of our... Part
of what we're good at.

Swimming, sneaking through the water,
and you know, getting stuff.

That's at least five
days to a week without

- water submersion.

And so for me,

I will not be another

I'm building the fish basket

so that we have another
shot at getting food.

Any time you can

get better odds out here for survival,

Looking back on our

I'm going to take
my toggle bowfishing setup

and try to attach line
to this arrow safely

and try to see if I can
shoot one of these mullet.

improvise yet again.

it'll make it heavier,
make it actually have

a neutral buoyancy in the
water instead of floating.

I mean, you guys can't get in the
mud or the water, and this is a swamp.

Come on. There's gotta be something
that the environment gives me

to help me make a smoker.

Because we have to
smoke this gator meat,

otherwise it's
gonna go to waste.

I'm looking for something
in the environment that will

give me a blocked off
area or an enclosed area,

something that might
trap in heat and smoke.

I'm in the process of field
dressing this alligator here.

So I'm starting with the head.

Some of the best meat is right
here in the cheeks, soft and tender.

I'm gonna get his head off

and I'm gonna cut him
right down the middle.

Then I'm gonna go right
down all four quarters here.

The alligators, their skin is
attached to their meat super hard, so

I'm gonna have to come by and just
slowly peel away a little bit at a time

until I get down to
that bare scaly skin.

But it's really important not to
rupture the intestines or the guts,

it can spoil the meat,
so it's a very delicate process.

And you gotta do it the right way,
because if you don't do it the right way,

you're gonna miss out on a lot of
meat and you're gonna ruin the animal.

Wow.

Okay, this is interesting.

This entire tree base,
from here all the way down to the ground,

is completely hollow.

I mean,
this is almost like a smoker already.

I should be able to cut a
hole in the base of this tree

in order to feed sticks in
to keep the hot coals going.

And I can actually put a grate
in here that holds all of our meat.

This is a huge find.

Yes!

I'm gonna be able to open
that hole up with my knife blade,

that's where I'm gonna
feed in the green sticks

and then that's gonna cause the smoke
to go all the way up through the chimney.

And we're gonna have meat layered
on racks all throughout the smoker.

We're gonna be able to smoke
pounds of meat at a time in this thing.

This smoker is a considerable
distance from our shelter,

but I'm not worried
about critters coming in

and getting any of our meat
because it's entirely enclosed.

There's no way in this smoker,
except through where

we're gonna be
feeding in the green logs.

And the top. There's no predators
that can get our meat in here.

They might smell it, they might want it,
but this thing's protected.

All our meat's gonna be inside here,
in the trunk.

I love it when mother nature
helps you survive out here.

I'm putting in this in there.

Just gonna clean off all that meat.
That way when jeff puts it in the smoker,

it's gonna be nice and clean,
we won't have dirt and bark.

where we're gonna stack our meat

inside the smoker.

And all the meat that's on the
grill here is all gonna be smoked

from bottom all
the way up to top.

completely hollow inside.

I've created this lattice structure,

run for hours by itself.
