Leaving Mount Etna behind,

we're on to the final leg of our adventure.

Our first stop is Enna,

a province in the heart of the Sicilian countryside.

After that, we head home to Palermo

for my special birthday reunion with all my family and friends.

We've arrived in Enna, our home for the night.

Surrounding our B&B is the farming heartland of Sicily

and the origins of one of Italy's finest exports.

Next on our trip is food.

Food!

Ancl most important is, obviously, in Italy, is the pasta.

We're going to eat pasta,

but we're going to make pasta as well.

We are meeting Carla and Silvia to help us make a local speciality,

cavatelli pasta.

This is the way my nonna used to make it,

which uses durum wheat ground down into flour.

but he only learnt how to make a cup of tea last week.

But then I realised that the priest can't really have a connection

with the ladies.

We've arrived at the Abbey of San Martino delta Scala

on the outskirts of Palermo.

The abbey, which is home to 12 monks,

offers overnight stays to travellers,

giving them a chance to experience

a much more simple way of life.

It could be the first time anybody gets refused in a monastery.

We're meeting Abbot Vittorio Rizzone,

who will be our spiritual guide through our monastic stay.

I have a Spanish mother and Hungarian father, both Catholic,

and we went to church every Sunday, as a boy,

and I was in the church choir.

And so my childhood was steeped in the values of the church.

So it's not new, but it's been a while, I'll say.

Maybe I've dropped off a bit.

What's the routine?

Our clay is according the Benedictine motto, Ora et labor a.

Ancl so we begin with the prayer at 6:00.

The structure is quite strict.

So I would struggle to have this lifestyle, to be honest.

There's a lot of stairs in this place.

Every resident in the monastery must earn their keep,

whether that's in the on site brewery or the kitchen gardens.

And with no judging or dancing available,

we've been tasked with something a little less footloose

and fancy-free.
