I know that there are multi rooms here

multi levels

can you explain a little bit of that to us

tell me what are we gonna make today

I see some seafood all on deck

so if you're cooking in the raw

I feel like

what better way to show off the raw than mussels

we've got some beautiful

big plump Prince Edward Island mussels

we want to do a very seasonal presentation of it

we're doing some sauteed corn

some roast poblano peppers

if you've never had a poblano

imagine a spicier bell pepper

but a less spicy jalapeno pepper

so if it's your introduction to heat

it's a good way to start

I like that

and what's really cool about this is

we're gonna add a little bit of mezcal

oh my goodness

the magic word itself

so you want to use a pot that

a has a lid so you can steam the top

but B has a high side

escal corn chili's

you want steam to happen

if you're using a shallow saute pan

all the steam is going to release into the atmosphere

and nothing's going to get trapped

yeah little by little

he's just being stubborn

yeah I'm still gonna fucking eat him

I can't wait

we got a ripping hot pan

we're gonna add some sliced garlic

garlic you wanna kinda cook till it gets light brown

once it gets brown

it's like really sweet and kind of candy

like we add a little bit of shallot

we're gonna add some poblano peppers

we're gonna add some of our sauteed corn did water

and then we added a little jalapeno

garlic and shallot as well

now the flavors are marrying together

you've got separate flavors

as opposed to one mutual flavor

right now we want to season with a little bit of

kosher salt or sea salt

that's I never know how much to use

until it feels right

just eyeball it huh

that's right

or until you're like 15 years in the game like me

and then 15 years

what were you 2 when you started

oh these babies now

so when you add the mussels

assume that they're gonna double in size

cause this is what it is before it goes in

then it's gonna open up

so 12 mussels

is actually a bigger pot than you would imagine

pop them in there

so you're gonna toss them around

but this is where it's gonna get a little crazy

okay never ever

ever add a hard liquor directly from the bottle

why it's gonna catch on fire

the fire's gonna come up your stream

and go into the bottle and burst in your hand

always add it to another container

something with a wider mouth

and then from there you want to add it in

okay you added in

I add you drink

so you want to take it off the flame

add your mezcal and

I can feel that

move it around a little bit more

cook off that excess oil or excess alcohol alcohol

so we're gonna let that kind of steam on high

for a little bit

so what we're gonna do is take a piece of this

grilled mesh

if you don't have a grill

toasted butter whatever

right in the bottom

and then we're just gonna top it on top of that

and that's just gonna soak up all the liquid

wow you just toss it right on all

on top all the great

like old school French groceries

they give you that like

huge tall pile of mussels

and that's really what we all really want yeah

oh my god this steaming plate of deliciousness

then we're gonna garnish with very simple garnishes

and don't even give it a thought just pop it on there

we got pickle red onion we've got chopped cilantro

make it messy and then some limes

you have good gramp how I can't get that much out of it

steamed mussels with mezcal povlano and corn

smells great it smells amazing

wow fresh delicious can we eat it yes please
