Chicken Castaldo.

First, you need a plump
roasting chicken.

Wash and just pat dry
the bird with a paper towel.

Take the warmed
butter-and-garlic sauce...

and just smear it
all inside the cavity.

It might feel funny,
but you have to get way up in there.

After this,
you are legally engaged to the chicken...

in 14 states.

Crush two of the garlic cloves,

mix with tarragon some of the
vinegar-and-oil dressing that we have prepared...

and spoon this over the
breast portion of the chicken.

And then sprinkle the breast
with that freshly ground cinnamon...

that you made during our break.

Now pan-saute the stuffing,
adding the ingredients in the following order.

First the apples, then the pineapple,
then the almonds,

and then just add
a touch of sherry.

Use a threaded trussing
needle to sew up the cavity.

Do a good job and you could get a
part-time job in an emergency room.

Now preheat the oven
to 450 degrees.

Reduce the heat to 300 jut prior
to placing the chicken in the oven.

Every five minutes for the first half hour,
you must baste the chicken.

Then wait 15 minutes and ladIe on
the remainder of the tarragon sauce.

Cook for a total time
of one half hour...

for three-quarters
of a pound of chicken.

Add 10 minutes
for each additional bird.

It takes a lot of preparation,

a lot of oven tending and
a lot of kitchen cleaning.

But it will all be worth it when
you serve Chicken Castaldo.

It's wonderful.
