that the fire brigade think
it's deliberate?

They found evidence of arson

and the pathologist said
that Damien had been struck.

police said the fire was started

to try to cover it up.

night, I don't have an alibi.

was at the staff party.

took a gamble
a couple of years ago,

Then, one of our batches
was tainted.

Then somebody made an anonymous
health and safety complaint about us.

Damien was convinced
somebody was out to get us.

[voice breaking] And now this.

along when Laura took over.

and a lot of the indies end up
selling to the bigger brands.

Laura had an idea for something
completely different.

We were celebrating the first
matured batch the other night,

when it happened.

everyone had a drink.

but I can tell you one thing.

Now, I am sure some of you
will have heard

about our tragic fire recently,
but we are a family here at Balfe's

and we all pull together.

Some people say
the process of whiskey making

starts here, in the still.

We press our barley here,
into what we call mash.

What do you mean "some people
say whiskey making starts here"?

Ah, well, see, we believe

that whiskey starts in the field
where the crop is grown.

You see, we don't just buy in
any old grain.

We select the finest

and we invest in the farmers
who grow it.

[TV] On today's show, we ask...

- Weren't you going for a run?
- Nah. Tendon's playing up.

- You're watching telly?
- Yep.

It's 10am.

I know. There's nothing on.

OK, guys, next we ferment
the wort with yeast,

which eats the sugar
and produces carbon dioxide

and alcohol.

Now, at this point,
the wash is around 8% alcohol,

and that is when we start our
three-step distillation process.

Now, triple distilling is, of
course, unique to Irish whiskey.

Don't you lose a lot in vapour
by going through three steps?

[Finn] Er, not a lot,
but that is true.

We lose around 2% of whiskey
every year

through evaporation over the
whole process. We call this-

- The angels' share.
- That's right.

So, when the wash goes
through the three pots,

the alcohol content rises
to around 80%.

- 80%? That's rocket fuel!
- [Finn laughs] Yeah!

Well, from there,
it goes into barrels.

Now, we buy our barrels in
from America.

They've mostly been used
for bourbon,

so that lends another taste
element to our whiskey.

The newly made whiskey has to
be let mature for three years

in order to be called Irish.

- Where do you get your casks?
- Texas.

You should try Tennessee.
Smoother blends.

[Finn] Right, well, the...

the warehouse where we keep
our barrels is just out back,

and that is where
we are going next.

You store your grain on site?
Can we see it?

- It's just vats of barley.
- [Chuck] Sounds fascinatin'.

Right, would you like
to join me, guys?

[Fergus] Chuck Miller
is only his nickname.

Indeed.

Let's go speak to Mr Miller,
shall we?

[Finn] Down here, guys. Lots to
see if everybody keeps going.

[Harry] Whiskey novice, my eye.

distilleries in Tennessee.

- What do you mean
who are we with? - Are you another distillery?

We're private investigators.

We're here
to look into Damien's death.

The real question is,
what are you doing here

and why are you taking all these
notes about their practices?

I was buying the place,

and then Laura Balfe
changed her mind.

I'd done a deal with them,
and now they're welching.

We work with three farmers
in our local area.

We've examined their soil
and water supplies and we found

the pH levels are absolutely
perfect for our purposes.

Now, the whiskey-making process
is brutal,

but we believe you can smell
and taste the barley

through the whole time.

The DNA is maintained,
so it matters.

[screams]

[Harry gasps]

[Chuck] Get Johnny on the phone.

we have to close.

Did they say what happened?

They think he was drowned
in the barley and then shoved inside a barrel.

and the local Guards have their
eye on the woman who hired us.

why they're focusing on her.

I've taken on a few new hobbies

and Orla has me doing stuff
around the house.

Now, I did speak to one
of the distillers in there

about that batch of whiskey that
was tainted a few months ago.

Now, he says he's convinced
it was in-house,

because security is tight.

Do you think Rick
might been working with Chuck

and they planned
the sabotage between them?

And maybe he had to stop him
from spilling the beans.

[Finn] I want the place
to be tidy when she gets home.

[Harry] They're keeping her
overnight?

They claim they have
new evidence.

Laura would never do
any of this, I mean, surely that's obvious.

Why won't they let her go?

We've been wondering if, um...
if Rick may be working

with someone
to sabotage the distillery.

We saw him speaking
with Chuck Miller.

- Who?
- The American on the tour today.

- He's Charles A. Miller III.
- What?

He owns one of
the largest distilleries.

- That's the one.
- He was there today?

He said that you and Laura
were...

were planning
to sell the distillery to him.

That's a lie. We'd never sell.

I've never even met the guy,

a truck parked outside Balfe's.

- Harry, look at the date stamp.
- Yeah, the day he died.

the police are after her.

behind them.

- Someone was watching them.

We need to find out
who was watching what happened

that were happening.

as talking to anybody.

[knock on door]

there's nothing you could say
or do that allowed Damien

to inflict personal harm on you,

Damien never hit me!

Everybody gets mad
in an argument.

He didn't do anything wrong.

That fight you had
was early in the morning.

Did you see anyone else
at Balfe's when it happened?

I didn't go in.

I went home, I was ill.
I didn't see anybody.

But Moira is usually the first

[sighs] I just wondered
if somebody else saw that fight

and got angry at Damien.

and he spoke to a contact
he had in the police up there.

Damien had no convictions,
but the police knew about him

not least because
of what happened on the farm.

Somebody has been asking
about Damien recently.

Oh, well, while your ex-knight
in shining armour was doing that

I was going through
every photograph taken

the night of the party
to see if Moira was missing.

Now, she wasn't,
but somebody was.

I think I know who it is.

Is it enough
to confront our suspect?

I need to confirm
the motive, Fergus.

For heaven's sake, what does
this have to do with me?

[Fergus] The police are closing
in on you.

They know you were working with
somebody to sabotage Balfe's

from the inside
so you'd get a quick sale.

That is complete horseshit.

They made a deal with me.

They're the ones in the wrong.

but I was getting suspicious
of his breakup story

and I knew there was something
going on with Laura.
