I'm really excited to be going to Coachella Valley.

So far, I mean, it looks really beautiful.

It's gorgeous.

I love the mountains and, like, the palm trees.

It's just, like, awesome.

We're driving into the Coachella Valley

and we are so excited.

This is gonna be an awesome town to sell in.

I think with three teams left

it's definitely getting a little bit more real for us.

Like, I'm starting to think about, like,

what we're gonna do if we actually get this money.

Like, it's becoming, like, a reality.

Now when it's down to three it's, like, really scary for me

'cause I feel like us being in the bottom three last week,

means that we could go home.

I'm nervous 'cause back to back wins Phoenix, Yuma,

like can that streak continue, Ed?

We are coming off a major win in Yuma.

I am ecstatic to get to Coachella

and just keep it going.

The thing that we've been able to do is adapt

Whatever challenge we've been given

we have to deal with, you know so.Right.

Food Truck teams, welcome to Coachella Valley.

[ Cheering ] -Oh, yeah.

Well guys, we're here at Hadley Date Gardens

and all these palm trees,

all 500 acres of them are date palms.

A little history lesson.

So around the 1900s farmers thought this area

felt like the Sahara Desert area in Africa.

So they imported some seeds

to see if they could grow some dates themselves,

and by the 1940s,

the Coachella Valley was the number one

date growing area in the world.

These are Deglet Nour dates.

It's a delicious date that's moist and sweet,

and perfect for cooking.

Now each date has a hard pit as I'm sure you know.

If you get dates with the pit on the inside,

I'm gonna show you a really good trick

on how to get the seed or the pit out

using a wooden kabob skewer.

If you take the flat side of the skewer,

but then you simply just push the date pit

all the way out to the top.

Did you see that?

And that is how you take the pits out of dates

using the wooden skewer, is that cool?

Loved it.

Now, guys, in front of you is everything that you will need

to pit these dates yourselves.

Now when I say go, I want you to come up

and grab a box of dates

and then bring them back to your station and start pitting.

Once you've de-seeded a pound of dates,

I'm gonna give you guys your $400 in seed money.

So you can start shopping, prepping,

and selling in the Coachella Valley.

That headstart is everything in this game.

If you can get your shopping done before everybody else,

So I noticed that everyone was using

I used three or four, this way it has more surface space

to push the date out.

New England Grill has a quarter pound

of dates perfectly cleaned.

Oh, my god, this is hard.

Now each of you need to make a dish using the dates

that you guys got this morning.

We have to do one more dish.

They need to be original and most importantly,

they need to be over the top delicious.

With the date challenge,

our idea is to take the fritter batter

that we've been using for the lobster fritters

and to incorporate that into a dessert dish.

-Two milks, Ed. -Flour, ricotta, cinnamon.

Our fresh homemade zeppole is a nice batter

with ricotta cheese, sugar, cinnamon,

little bit of flour and eggs,

and a nice fig reduction with the dates and an apple juice.

-Here sweetie. -No, I'll carry it.

I got it.

Barbecue.

-We're doing chicken wings. -And we're gonna make a sauce.

-Yeah. -Out of dates.

Here one of these, that's it.

We're gonna buy orange juice for the base of our date sauce.

-Right. -Okay.

-Some honey. -Some honey, molasses.

Sometimes you just gotta stick to your guns

and know what you're good at.

-We need flour. -And sugar.

We're starting to run with the idea

of making a date donut.

We're going to put the dates in the donut

and then also make a creamy date sauce

to drizzle over the top of the donut.

-All right, anything else? -No.

I think that Tyler's gonna be looking for something

a little bit different on this challenge.

I found this girl on media and I wanna give her a call.

We're on social media and we find this woman

that seems to have a lot of influence in Palm Springs.

I just saw that she's like big on this, like,

Palm Springs media. -Uh-huh.

And I just noticed that her and this Rob guy

are the hosts of this huge Facebook group

that posts a bunch of events.

So we reach out to her to see

if she might be able to help us find a spot.

it's right on the corner of Indian Canyon and Arenas Street.

So we decided to go sell downtown Palm Springs.

The manager at Chill Bar was very kind.

He let us get a parking spot right out front.

They're not serving food in their bar,

so he's happy to have us.

We arrive in downtown Palm Springs.

We find parking right away.

Go on, this is actually a good corner.

And we're parked across from Mobile Moo Shu.

Everything's worked out to how we planned it out.

Go ahead.

All right so, anywhere in here is where we're going.

We are driving around and finally we decide

to park over where the other food trucks.

-Got it? -You got it.

We've never been scared of competition,

and we believe if it's gonna bring the people

that we're gonna get some good sales.

Look at Christine doing a beautiful job with this thing.

So we take the chance and we pull up

right next to one of the other trucks.

For our specialty date dish we're gonna do fresh zeppoles.

Our menu consists of the date special,

which is our zeppoles.

Once our zeppole batter is made,

we basically will scoop that into the fryer later.

When that's golden brown we toss it

in a cinnamon and sugar mixture.

And then for the filling we've made a date raspberry apple

type filling that we've reduced the dates

that we pitted until we have a nice squeeze bottle full

that we can just fill up the warm zeppoles with.

You're not gonna get that at Moo Shu, I can tell you that.

We're also doing our shrimp quesadilla.

Some nice shrimp with Old Bay that we cook on the flat top

and a nice pico de gallo

that we make from fresh tomatoes and peppers.

Hi, are ya hungry? How 'bout some dessert?

We made a local date zeppole.

We knew that the zeppoles as a dessert choice

on our truck would be a great one.

Okay.It's only eight for a local date.

All right.

And then you'll get a date with me, too.

They're moving.

You wanna try the zeppole?

-Yeah, I think so. -Yeah, cool, very cool.

One order of zeppole, bro.

And this is really starting to be

a great menu choice for our truck.

CHRISTINE: There we go, my lovely friends, beautiful.

On the menu today, we have a first date donut,

which is our date donut with lemon zest

and then also the milky date sauce.

I'm throwing in some juice and some evaporated milk,

a little bit of honey

and a little bit of cayenne pepper

for a little bit of added spice.

Once we cook that down it softens the dates enough

that we can put 'em in the food processor

and then really get a nice, rich sauce going.

Then we're doing our Korean bulgogi fries.

All right, so should I wait on cutting this meat

and start a donut? -Yeah.

Scooch in, hot.

Today we're gonna be selling our date barbecue sauce.

That's dates that we're reducing with some water,

some honey, some pepper,

some soy sauce. -Seasoning with sriracha.

Soy sauce, sriracha.

We're reducing some freshly squeezed orange juice right now.

We got garlic parm and the classic buffalo.

-Yay. Thank you, sir.

We found our stride in Yuma,

and now we're just gonna sprint to the finish line.

I feel that the dish just didn't come together

We know that we really wanna do well on the taste challenge.

Now we have to make new donuts.

I'm gonna put some of these dates in the donuts.

I put in a little bit of oil and then added in some ginger.

I thought the ginger would really bring out

the sweetness of the dates.

It's getting down to the wire

and we're super worried about the donut.

Oh, that's a donut, guys.

What we ended finding was

there's far too much baking soda in it,

which caused it to look very burnt

every time it came out of the fryer.

I'm gonna love this donut.

It's gonna be the best donut we've ever had.

I don't think I've had a donut like this ever.

I would definitely order this again.

so we're feeling confident.

with a chipotle ranch dipping sauce.

We're gonna top that with some fried green onion ringlets

and garnish with some chives for brightening up.

The Hi-Man is this stacked sandwich.

It starts with a garlic aioli.

Then we load on some french fries, the bulgogi beef,

a Korean barbecue sauce, pickled onions,

and top it off with some chopped carrots.

That's definitely spicy, really good.

It's really tasty.

Eat anything and everything on the menu.

We have a bulgogi french fry, which it has been

traveling to every city with us.

We have a Cali hot dog, and then we also

have our Hi-Man sandwich.
