the nachos del grande

From taco bell.

This is what nachos
should taste like.

You know, the combination
of the cheese, beans, meat,

a little accent.

This is all the ingredients
that you can get at taco bell

In one dish.

And that thing
has to go.

I remember,
in seventh grade,

Always, like, having
to save a $1.07

So you can get a meal.

So, I needed, you know,
as much food as I can get.

And that's when I went with
the nachos del grande.

But also, I got some cinnamon
twists -- a winning combination.

This is perfect.

It doesn't have
a lot of extra stuff.

It has what it needs.
It has the fat from the beans.

It has the crunch
for the chips.

It's got that jammy meat,
and then, the nacho cheese,

Which is like
that velvety butter

That just links
everything back together.

What makes it your favorite?

It's, like, a snack,
but it's also a meal.

Taco bell did nail
their sauce game.

I don't think there's any other
chain that has the variety.

I usually make
a combination.

I take mild
and fire.

Yeah, taco bell,
they a champion with the sauce.

So, our first task is,
we're gonna take

We're going to try
to copycat it exactly --

our chef brains,

And try and turn it into
something completely different.

so, let's get in the kitchen.

This is so cool.

Baron, have you ever
attempted to make these before?

Baron: Absolutely not.

I felt like
the most delicious part

Of that meal, for me,
was the meat.

Going into
the copycat round,

Our beef is
the main star for me,

So I'm gonna go right into
getting my beef made,

Which is gonna
take some time.

The taco bell seasoning
is known for its seven spices.

I'm gonna caramelize those
while it's cooking,

Because when you have spices,
you need to get them hot

With oil to actually
release their fragrance.

If you look in here, there's
a lot of oil separated, now.

But that oil
is all the flavor,

So I'm just gonna emulsify
the fat back into the meat.

Y'all really be going at it
like this, huh?

Oh, yeah.
We got to.

So, for the
nachos del grande,

I've got to get the spice down
for this meat.

I'm gonna break it up
really fine.

I'm actually gonna add
some flour

That's gonna create a roux
to kind of get that jamminess

That taco bell meat has.

Then, it's all about
the cheese sauce.

I'm going to use
kind of a mixture

Of velveeta and american cheese
to get it nice and melty.

Oh, yeah, you know that's
my specialty -- velveeta.

Right?

Can I make my own
nacho cheese sauce?

Yes.
Am I going to for this?

No.

I'm gonna just take this,
and I'm gonna --

I'm gonna thin it out
a little bit.

I'm gonna season it
a little nicer.

But ultimately,
that's what it is, right?

That's that good stuff,
right there.

That's that guap,
that --

guap.

Alright, so, baron,
we have two kinds of chips.

We have
the store-bought ones,

And then, we also
have corn tortillas.

So, neither of them
are exactly like taco bell.

So, I figured I'll make
some homemade tortilla chips,

And then, I'll use some
store-bought tortilla chips,

Mix it together,
hoping that, coming together,

They will find the middle ground
of taco bell.

I'm gonna use just
your giant muscles,

To, just, like,
smash it.

And that's how we're gonna make
that ground meat into,

Basically, a meat jam.
- Okay.

Which sounds delicious,
doesn't it?

Can you bottle that,
and sell that in stores?

Of course we can.

Baron's meat jam.

It's a slam dunk.

In the copycat
round today, we have to make

The nachos del grande
from taco bell.

This is a whole new level
of crunch.

So, from my version of
the copycat cinnamon twists,

I'm actually taking
the churro route.

Crack that egg, and we're gonna
go right into this mixer.

So, inside of here,
I've made, like, a little dough.

Oh, this is gonna
be fun.

Like you cutting
a blunt.

Grip right there.

We'll do, like, 6-inch...
Let's hold there.

It looks like a churro
so far.

I know.

I'm so excited.

That looks good.

My uncle,
all his fingers look like that.

They all
the same size.

I'm gonna call these
"uncle fingers."

So, I'm gonna do
my cinnamon twists

Just a little
bit different.

I'm just gonna
go for texture.

I'm going for styrofoam.

So, I'm just gonna basically
take these.

It's basically rice.

And when you throw them
in the fryer, they pop out.

But then, how do you
twist that,

And then,
put all the air inside?

So, I'm not even gonna try
to twist it.

I know I'm not gonna really
nail that iconic spiral shape,

But I think
I could get close to,

Like, that styrofoam-y,
like, bubbly texture.

Baron likes to mix the medium
with the fire,

So, what I'm gonna do
is make him his perfect sauce.

I'm gonna take some whole
canned tomatoes,

Puree those up,

And then, add all of those
taco bell spices.

Tell me that that is not
taco bell sauce.

I made the sauce.

Fire.

Alright, baron, you want to go
grab your seat over there.

We're gonna plate up,
and eat some food.

Alright, baron,
that was our copycat round.

So, the next order of business
is for you to eat.

I think we're gonna start
with kristen's.

For the nachos, we had
the store-bought chips,

And we also had
fresh tortillas.

The meat, focused on
the jammines, and nacho cheese.

So, for my cinnamon twists,
I took rice paper sheets,

Deep-fried them,
they pop up.

And sprinkled it with
a little cinnamon and sugar.

- This look delicious.
- So, dig into the nachos.

So, that one's
the homemade chip,

And then, there's
a store-bought chip.

That's really,
really good.

The homemade chip actually,
like, makes everything hit

A little bit more closer
to taco bell.

Wow.

I mean, this is very,
very consistent to, like,

The look, the feel.

It feels cheap,
but it's not.

I opened that jar
of nacho cheese,

And thinned it out
with a little bit of water.

It was great.
Alright.

Well, you can try
the weird cinnamon thing.

Oh, these are fire.

It tastes like it,
though.

All you have to do
is twist them.

It's the same
damn thing.

Yeah.

I thought some of
the most important parts of this

Were getting that jamminess
of the meat.

I added a little flour
to the pan,

And kind of created
a really light roux

That was gonna bind it together,
and make it jammy.

So, on the
cinnamon twists, there,

I decided to go
the churro route.

I tried to cook them
a little bit longer

Than you normally would,
so they wouldn't be

As doughy inside --
a little more crunch.

And then, just hit them with
the cinnamon and sugar.

And the icing
on the cake --

I decided to go a little above
and beyond

And make you some taco bell
fire sauce to go on top.

Oh, man.
I feel special.

Yeah, so, dig in.

This is fire.

Like, the sauce just brings
everything to life.

The meat has, like,
the taco bell, like...

Almost like
the seven spice flavor.

You know what I mean?
- Yeah.

This sauce is bomb.

That tastes
fresh out the pack.

I got a couple friends
I brought.

So, basically,
I'm gonna work with

A little bit
of lobster today,

Poach it with
some of those flavors

From the taco seasoning.

You eat the nachos
del grande,

I get a lot of corn flavor
in there,

So I'm gonna work on
a fresh corn polenta.

So, grate them fresh
on a box grater,

And cook them very lightly,
just for that polenta feel.

You'll get, like, a tortilla,
and you'll kind of dip into,

Like, lobster and corn.

Damn.

I'm gonna keep it
south of the border for you,

And I'm gonna turn
that whole dish into a pozole,

Like a very traditional
mexican soup.

I'm gonna use all of those
flavors and seasonings

That he loves
from that taco bell sauce,

And make the most beautiful
broth you've ever seen.

One of the quickest ways
to get a lot of body in stock

If you're making soups --
chicken feet.

I've never seen
no chicken feet.

We had tarantulas today.
