When you're in the industry,

sometimes you don't realize how many weeks
and months and years roll by

and how stressful it is.

And you just need that break sometimes.

Most people work at the bar
or nightclub on the weekends

as a getaway, a party.

Your drinks are put on a bar tab,
which comes off your paycheck,

and I've had paychecks
where I've owed the bar 600 dollars.

Staff shouldn't come to work tired.

They shouldn't come drinking on the job

or else they make stupid decisions.

Definitely your management team

is supposed to be leading your employees
and setting the example.

But if they're off running around,

getting romantically involved
with the other staff,

it's unprofessional,

and it leads to the wrong impression
to your employees.

It's tough to not cross the line
when you're managing beautiful women.

All the booze, all the partying,
it's tough not to be tempted.

In my four years at Tequila,

running the bar has always been
a two-man show.

My partner, Chunk, and I
achieved a good balance

where I was more the face of the business

and he was more operating in behind.

I need some light bulbs.

I'll be tired at the end of the night,

but when the staff sees me move,
then the staff works just as hard.

When they see me partying
and sitting down doing nothing,

they're gonna do nothing.

But Chunk is retired from the bar
and I'm doing everything on my own.

This weekend is one of the busiest
that I can remember.

I just hope I totally don't burn out.

I have two parties planned this weekend,
starting with St Patrick's Day tonight.

And right out of the gate,
one of my doormen is late

and not in position.

Not only did he not show up at 7:30,
he's 10 minutes late for 8:30 shifts.

I realized after New Year's Eve

that I was being a little too casual
with the staff.

your buses are loading.

Pub crawls are important
to any bar business.

First of all you're getting people
into the club early on in the night.

They get on the bus

and we ship them around
to different bars in the city,

and they come back about 11:00

when it's the busiest time of the night.

Next, our pub crawl bus dies,

stranding 40 or 50 people
in the middle of nowhere.

Embarrassingly enough, I had to get a bus

from another bar to bring
our patrons back,

and now I have the stress
of getting our bus towed.

when they were about to leave

I recently became
the head bouncer at the club.

So how goes life at Tequila?

Kinda sucks being short staffed.

I got a hold of Mitch,
the former head bouncer here.

I wanted to sit down
and get a few pointers from him

at the club anymore,

I feel like my life has actually begun.

One of the big determining factors
of me not being at the club

was, obviously, my girlfriend.

and what's important to me,

We had a guy who wouldn't

that I've done in the past,

and Simon really has no experience

It's awesome that Chunk came in

to lend us a hand
to help setting up all the ice.

I feel like he wants to micro-manage

all about multi-tasking right now.

During the week, if I'm with Chunk

Working for both Chunk
and Simon is great and all,

but often times I'll find myself

I've been so liberated

and made a million things
happen since I left.

And I was almost on my way out of the club

when my new sexy beer tub girl
showed up in her comfy pajamas

to join me to have
a few more refreshments.

And one drink led to another,

and 8 AM came pretty fast,

and it was breakfast time.

People will greet me on the street,

and I'll say that I'm Simon,
and they'll ask me if I'm The Simon.

The girls just rage here some nights,

and sometimes I wish that I can live
up to my reputation.

I've seen girls having full-fledged sex
on top of my bar,

to a mezzanine underwear party

where our cleaners broke it up
at 6 in the morning.

To things that I can't even say.
